Batata Balls (Chicken And Potato Balls)

Ingredients

  • Chicken boneless 200 gm
  • Potatoes boiled 2
  • Green chilies chopped 2
  • Fresh bread crumbs 4 slices
  • Gram flour ½ cup
  • Cumin 1 tsp
  • Mustard paste 2 tsp
  • Red chili powder 2 tsp
  • Vinegar 2 tbsp
  • Soya sauce 2 tbsp
  • Fresh coriander 2 tbsp
  • Oil for fry
  • Salt to taste

Cooking Directions

  1. Cut the chicken and cook it with red chili powder, vinegar, soya sauce, mustard paste, salt and ½ cup water.
  2. Cook till chicken is tender.
  3. Now cool the mixture and add chopped green chilies, fresh coriander, boiled potatoes and cumin seeds.
  4. Make small balls of the mixture.
  5. Make a paste with flour and water as required.
  6. Dip meat balls in paste and coat fresh bread crumbs.
  7. Deep fry in hot oil till its color turn to golden brown.
  8. The Batata Balls are ready to serve.

Tomato Cream Soup

Ingredients:

  • Butter 1 ounce
  • Onion 2 tbsp chopped
  • Carrot 2 tbsp chopped
  • Ginger 1 tbsp chopped
  • Garlic ½ tsp chopped
  • Cinnamon 2 sticks
  • Black pepper 6
  • Flour 3 tbsp heaped
  • Chicken stock 4 cups
  • Orange food colour pinch
  • Tomato 250 gm chopped
  • White pepper ½ tsp
  • Sugar 1 tsp heaped
  • Salt 1 tsp
  • Vinegar 1 tbsp
  • Ketchup 4 tbsp

Cooking Directions

  1. Heat butter, fry vegetables, ginger garlic, whole spices, add flour, fry for 2 minutes.
  2. Add tomatoes with stock, cook for 10 minutes.
  3. Then add vinegar, ketchup, seasoning, pinch of red colour, cook for another 10 minutes till thick.
  4. Pass it through a fine sieve strain it once again.
  5. Serve hot with fresh cream and fried bread croutons.

Fried cheese balls

Ingredients:

  • Boneless chicken breast 2
  • Bread 1 small
  • Eggs beaten 2 to 3
  • Water 1 cup
  • Cheddar cheese 1/2 cup
  • Tetra pack cream 1/2 packet
  • Bread crumbs as required
  • Ginger garlic paste 1 tsp
  • Soya sauce 1 tbsp
  • Black pepper 1/2 tsp
  • Mustard powder 1/2 tsp
  • Salt 1/2 tsp
  • Mayonnaise 4 tbsp

Cooking Directions

  1. Boil the boneless breasts with water, ginger garlic paste, salt, pepper, mustard and soya sauce, till water dries cool and shred finely.
  2. Mix shredded chicken with mayonnaise, cream, cheddar cheese, coriander leaves and spring onion leaves.
  3. Wet slices of small bread in little water, remove well, by squeezing between your palms.
  4. Fill with filling and roll into thick peti shape round.
  5. Dip in 2 to 3 egg, roll in bread crumbs and fry till its color turn to golden brown.

Chicken Jalfrezi Kebabs

- 2 lbs Boneless chicken thighs (cut into bite size pieces)
- 1 red bell pepper
- 1 green bell pepper
- 1 large onion
- 1 1/2 tsp red pepper
- 1 tsp corriander powder
- 1 1/2 tsp salt
- 1/2 tsp cumin powder
- 1/4 cup oil
- Juice of 1 lemon

COOKING DIRECTIONS

1. Marinade chicken with oil, lemon juice, salt, pepper, corriander and cumin powder for at least fifteen minutes to half an hour.
2. Saute chicken in a large pot on high heat so meat doesn’t give off the juices and rather fries.
3. Continue to fry while stirring until chicken is completely cooked.
4. Chop bell peppers and onion into chunky cubes and stir into cooked meat.
5. Cook for 2-3 minutes on high heat to keep the vegetables firm and crisp.
6. Remove and serve immediately.

Tandoori Chicken pizza

PizzaINGREDIENTS

FOR PIZZA DOUGH:(enough for 2 pizzas)
All purpose flour 1/2kg
Sugar 1tbsp
Oil 3tbsp
Egg 1
Instant yeast 1 1/2tbsp
Salt 1/2tsp
Lukewarm water or milk as needed

FOR FILLING/TANDOORI CHICKEN:
Chicken boneless 1kg
Salt 1 1/2 or to taste
Lemon 2tbsp
Vineger 3tbsp
Yogurt 1cup
Ajinomoto 1tsp
Ginger garlic paste 4tbsp
Oil 2_3 tbsp
Red pounded chilli 2tbsp
Black pepper 2tbsp
White pepper 1tsp
Chilli sauce 1tbsp
Soya sauce 2tbsp
yellow colour half tsp
Coal 1inch piece

FOR SAUCE:
Oil 2tbsp
Ketchup 1/2cup
Garlic 1/2tsp
Salt 1/2 tsp
Red chilli powder 1tsp
Ajinomoto 1/2tsp
White pepper 1/2tsp
Thyme powder(ajwain)1/4tsp
Oregano powder(saunf) 1/4tsp

FOR TOPPING:
Tomato 2 (cut into square)
Lemon 1(slices)
Onion 1 (chopped)
Capcicum 2(cut into square)
Mozzarella cheese 1pkt (shredded)
Chedder cheese 1pkt(shredded)

COOKING DIRECTIONS
1. DOUGH: Add all ingredients (don’t dissolve yeast in water as its instant yeast)knead with lukewarm milk or water don’t knead with fist even rub with palm till sugar disolve When dough become in smooth form cover it with polythene bag set a side till 1hour.

2. SAUCE: Heat oil fry garlic add rest of all ingredients cook for 2 mins then add 2 tbsp water cook more 2mins
Remove from heat let it cool.

3. FILLING: Mix all ingredients in chicken marinate for 1 hour bake at mark 4 or 180 degree for 40-45 mins.
Steam with coal.

4. When dough rise well take half of dough spread on 12” pizza pan mark with fork now spread 3tbsp prepared sauce,spread baked chicken (make tiny pieces) sprinkle black pepper spread onion,tomatoes,capsicum.lemon slice sprinkle black pepper and shredded cheese.

5. Bake for 10-15min at mark 2. (pre_heat oven on mark 2 for 15-20 mins)

6. Serve Hot with salad and sauces.

Pan Fried Shrimps

pan-fried-shrimpsIngredients:
1/2 pound of shrimp
2-3 tablespoons cornstarch
1/4 cup of corn oil
salt – to taste
pepper – to taste

Method:

Salt the shrimp and let sit for 10-15 minutes. Then rinse under cold water. This plumps up the shrimp and freshens them up. Now lightly salt the shrimp. Add freshly grated black pepper – as much as you can handle. Dip the shrimp in cornstarch. In a smallish saute pan (or wok), heat the oil to very hot, but not smoking. Spread the shrimp in the pan evenly. Hopefully they will all fit. After a minute or so, turn them on the other side. After another minute or two when they have turned pink, take them out of the pan. Squeeze some lime on and eat.

Hot and Crispy Fried Chicken

  • Chicken (cut in 8 pieces) 1 1/2 kg
  • Salt as per taste
  • Dry Garlic Powder 1 tbsp
  • Red Chillies (crushed) 1 tbsp
  • Black Pepper (freshly ground) 1 tsp
  • Whole Coriander (ground) 1 tsp
  • Cumin Seeds (ground) 1 tsp
  • Plain Flour (Maida) 2 cups
  • Corn Flour 1 cup
  • Cooking Oil for frying
COOKING DIRECTIONS
  1. Clean and wash chicken throughly and make deep cuts.
  2. Mix flour with corn flour, salt, garlic, red chilli,black pepper, cumin and coriander.
  3. In one half of the flour mixture,add enough cold water to make thick paste.
  4. Keep the remaining dry flour aside for later use.
  5. Dip chicken pieces in the flour paste and refrigerate for 4-6 hours.
  6. Then roll the pieces in the dry flour and refrgerate again for 10-15 minutes.
  7. In a wok, heat cooking oil on medium heat for 4-5 minutes.
  8. Fry the chicken pieces on high heat until golden.
  9. Serve with french fries, coleslaw and ketchup.
  10. To make the coleslaw,mix 1 cup mayonnaise with 1 1/2 cup of finely chopped cabbage.
